banana oatmeal muffins
I don’t often post about food. Not that I don’t like eating… quite the opposite.
I even tried to do a food blog once. I discovered that it wasn’t really my “thing”. Most food blogs have amazing pictures of food on them, and although I am an excellent eater, I am NOT an excellent photographer.
This time, I’ve found a recipe I want to keep, but the “pin it” button won’t work! I don’t want to lose it… because I love banana, I love oats, and I love muffins.
SO, my hope is that I can pin this from my blog to Pinterest.

Here is the recipe.
1/2 C. uncooked oats
1/2 C. milk (I used almond milk)
1/4 C. melted butter (I used a dairy-free option)
1 C. mashed bananas (the riper, the better)
1 C. flour
1/2 C. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
3/4 tsp. nutmeg
Stir together oats & milk & set aside for milk to be absorbed into the oats.
In the meanwhile… In a large bowl, stir together dry ingredients (flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg)
Add butter, egg, and banana to the oatmeal mixture.
Add wet ingredients to dry, stirring until combined.
Fill greased (or use paper liners) muffin cups 3/4 full, and bake for 13-15 minutes at 425 degrees. Recipe says 15… my oven runs a little hot, so 13 was perfect.
Remove from oven, cool on wire rack, and enjoy!
I might even add some Enjoy Life chocolate chips next time… 😉
