pancake heaven

I am not a food blogger.  However…

My kids love pancakes.

Correction.  They are OBSESSED with pancakes!

6 days out of 7 when asked, “what would you like for breakfast?”, they will respond

“PANCAKES!!!”

6 days out of 7 when asked, “what would you like for dinner?”, they will respond

“PANCAKES!!!”

Out to eat at a restaurant?  If pancakes are an option, they are all over it.

Obsessed.

I, however, was not obsessed with making pancakes.  It’s a long process to make from scratch, and the boxed variety just left me dissatisfied.  Flavor aside, reading the ingredient list made me gag a little.  I am becoming more and more disillusioned with “pre-fab” foods.

All that to say, I have been on the hunt for the perfect, easy, from scratch recipe, and thanks to the folks at Inspired by Familia, I now have it!

My absolute FAVORITE thing about this recipe (besides the rockin’ flavor!) is that you can make a big batch of dry, use some, and refrigerate the rest for the next day or two.  All I have to do is add the wet ingredients (3) and voila!  Pancakes again!

Here is their recipe (found at this link).  I am going to add in what I found to be helpful tips for us.

Dry Ingredients:

2 C all purpose flour

2 C whole wheat flour (recipe says you can use more all purpose.  I have always used the wheat & we love it!)

5 Tbs. brown sugar

4 tsp. baking powder

2 tsp. baking soda

2 tsp. salt

1.5 C oats (I used quick oats, but I ground them in the food processor to make them a little smoother.  My kids like the flavor, but not the texture of the whole oats in the mix.)

Mix together & store in an airtight container.  Recipes says if you store too long you may need to add more baking soda to the mix.  I wouldn’t know about that!  We always use ours up before that need arises! 😉

To make a batch:

1 C butter milk (or you can make your own… see the recipe link for the how-to)

1 large egg

2 Tbs melted butter

Mix butter and egg into buttermilk.  Add 1 C of dry mix.

Heat griddle or pan and spray with with cooking spray.  I use coconut oil spray.  A little extra “yes” in the mix.

At this point, have fun!  The pancakes are amazing by themselves, but my kiddos love them with chocolate chips, and I love them with blueberries!  Fresh is the best!
